Alevropita, or thin-battered feta pie, is my go-to lazy day bake. You know the days I mean? When you really want to spend just a few short minutes in the kitchen, but return with something homemade, tasty, and satisfying.
This alevropita is such a simple pie that it ticks all of these boxes (although waiting 40-50 minutes for it to bake can be excruciating when you’re smelling those amazing wafts coming from your oven)! It has only a handful of ingredients and a few simple steps, so whip it together and then make yourself a cup of tea, and sit down with a good book whilst it cooks! This is a lazy day baking, and you’ve earned it!
