These spinach and feta galettes are a year-round win for me! Perfect for breakfast or lunch, picnic pack ups for summer or light lunches al fresco, they are also exactly what I want for lunch when it’s grey, cold and drizzly outside.

Flaky, buttery pastry, salty, mouthwatering cheese and that iron tang of spinach, all served up with a side salad - it’s the perfect remedy to those rainy day blues.

Is there an alternative crust? Would pie crust work? Pizza dough crust?

Hi Maggie! Pie crust works well as a substitute and gives a more rustic, flaky texture. Pizza dough is also tasty, but it will be more like a flatbread. Both are great options. Let us know which one you try! 😊
