These quick and easy mozzarella and chorizo-stuffed peppers make a wonderful snack, light lunch or midweek dinner. Although I’m a veggie, the rest of my family aren’t, so I do cook meat products for them.

This is one of those handy recipes that works without the chorizo too (I might sprinkle a little oregano or paprika on top of mine, or add a few basil leaves, to make up for the absence of the spice hit from the chorizo).  I feel that chorizo satisfies my family’s meat cravings without too much input from me - it’s easy enough to have a chorizo in the fridge and you only need a few slices! Served up with a side salad, this is a lovely warming (and healthy) midweek dinner, or easy lunch. Why don’t you give it a try?

Made this recipe using mini peppers instead and they turned out to be the perfect bitesized finger food. Lovely idea, Sevi!
