This was the first “proper” dinner I made for my husband when we married. I’m so fond of this recipe, handed down from my mom, and still cook it regularly as a midweek supper.

It’s so balanced, with plenty of healthy veggies, lean protein from the chicken and carbs from the rice. Mix it up and use it as a filler for chicken fajitas the next night, and that’s two evening meals sorted!
