This festive-looking salad is a great way to use up seasonal ingredients like pomegranates and apples. Both fruits are available through the winter and spring, making this salad a great option for a Christmas or New Year’s meal. Tips
You can make the dressing a couple of days in advance and store it in the fridge. This will speed up the assembly of the salad as you can put it together at the last minute.
If you’re not a fan of walnuts, don’t worry – hazelnuts or pecans make for perfect substitutes. Just be sure to roast them first!
If you’re not a fan of green apples, pears are a delicious alternative. They might not have the same crunch as apples, but they make up for it in sweetness.

For the dressing, whisk together smoothly olive oil, orange juice, apple vinegar, maple syrup, turmeric, salt, and pepper in a small bowl then set it aside.
Next, add the onion, pomegranate seeds, cranberries, green apples, walnuts, and parmesan flakes to the bowl (reserving some for decoration).
