Omelette Muffins

These fooodlove omelette muffins are a perfect savoury option for breakfast on the go; they’re a filling and healthy start to the day.

  • 12 eggs
  • 60 ml milk
  • salt to taste
  • spinach
  • tomatoes
  • feta cheese
  • feta cheese
  • red pepper
  • sausage
  • cheddar cheese (grated)

Add the eggs and the milk in a bowl, and mix until combined.

Grease a nonstick muffin pan.

Pour an equal amount of egg mixture into each muffin cup (do not over fill so there is room for the fillings).

Add in each muffin cup salt and your favourite fillings. Remember to slice your fillings in small pieces so they spread inside each muffin.

Bake in the preheated oven at 180ºC (350ºF) for about 20 minutes (until golden brown).
