Thin-battered Feta Pie (Alevropita)

Simple and tasty! This thin-battered feta pie is best straight from the oven, whilst it’s still crisp-edged, buttery, and warm.

  • 450 g plain flour
  • 300 g feta cheese
  • 3 eggs
  • 500 ml water
  • 200 ml olive oil
  • ⅛ tsp pepper
  • ½ tsp salt
  • 100 g butter (melted)
  • butter (for the tray)

Use a whisk to beat the eggs in a large bowl, then add the olive oil and water and mix everything together.

Next, add the flour, salt, and pepper to the mixture and stir until everything is mixed together.

Add half of the crumbled feta cheese (150g) into the batter and mix lightly.

Preheat your oven to 170ºC, then butter a large baking tray (approx 40cm x 32cm) and place it in the oven for 5 minutes.

Gently pour the batter into your baking tray, and use a spatula to spread it across the surface evenly.

Sprinkle the remaining feta cheese crumbs over the batter.

Melt the butter and pour it over the pie. Bake in a preheated oven at 170°C (340ºF) for 50 minutes.
