Spicy Lentil Soup

This warming winter Lentil Soup is one of those recipes I almost consider to have medicinal properties that help you combat the grey.

what you'll need
  • 60 ml olive oil
  • 1 onion
  • 1 leek
  • 2 carrots
  • 2 garlic gloves
  • 2 tsp tomato paste
  • 1 tsp paprika
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • 1 tsp thyme
  • 1.2 l vegetable broth
  • 200 g red lentils
  • ½ tsp salt
  • ⅛ tsp pepper
  • 2 bay leaves

Chop the onion, leek and carrots in small pieces and add them in a large pot with the olive oil over medium heat and sauté them for 8-10 minutes.

Add the garlic, tomato paste, chilli powder, paprika, turmeric and thyme, and sauté for 1 minute to get the spices to release their aroma.

Pour the vegetable broth into the pot and add the lentils, salt, pepper and bay leaves. Let them cook for 15 minutes until the lentils are tender.

Once the lentils are cooked, transfer 2 cups of the soup in a small bowl and blend them.

step 5

Pour the puréed soup back into the pot, stir and enjoy it while warm with a piece of bread.
