Roasted Lemon Chicken with Potatoes

  • 6 potatoes
  • ½ bell pepper
  • juice of 1½ lemon
  • 2 tbsp mustard

  • 4 tbsp olive oil
  • ½ tsp oregano

To create the marinade, combine all the ingredients (olive oil, mustard, lemon zest, oregano, thyme, salt, and pepper) in a spacious bowl and mix them thoroughly until they are well blended.

Place the chicken drumsticks into the bowl and thoroughly coat them with the marinade, ensuring each piece is fully covered.

Cover the bowl with plastic wrap and refrigerate for 30-60 minutes, allowing the chicken to marinate and soak in the flavors.

Peel the potatoes, cut them into wedges, and add them to a roasting pan along with the diced bell pepper.

Next, add the olive oil, mustard, lemon juice, oregano, thyme, salt, pepper, and garlic to the pan, and stir thoroughly to ensure all the potatoes are evenly coated with the mixture.
