Pumpkin Soup with Sweet Potato

what you'll need
  • 4 tbsp olive oil
  • 1 onion
  • 1 leek
  • 1 sweet potato
  • 500 g pumpkin
  • 700 ml vegetable broth
  • 70 ml fresh orange juice
  • ½ tsp salt
  • ⅛ tsp pepper
  • ½ tsp ginger
  • 50 ml milk

Dice the onion and leek into small pieces, then add to a pot with olive oil. Turn heat to medium and sauté for 4 minutes, stirring occasionally.

After peeling the sweet potato and pumpkin, dice them into small pieces. Add them to the pot and allow them to sauté for an additional 4 minutes.

Finally, add the vegetable broth, orange juice, salt, pepper, and ginger to the pot, and let them simmer on medium heat for 25 minutes.

Remove the pot from the heat and pour in the milk. Use a handheld blender to blend the soup until it is smooth.
