A simple, quick and easy pasta salad with just a few simple ingredients and no mayo, that can be used as an appetiser or side dish.
Start by cooking the pasta based on the package instructions. Once done drizzle them with a little bit of olive oil and set aside to let them cool.
Cut the sausages in small pieces and sauté them in a non-stick pan with a tablespoon of olive oil for approximately 4 minutes.
Prepare the salad dressing in a small bowl by mixing the greek yoghurt and ketchup.
In a very large bowl add the pasta, the finely chopped onions and peppers, the sweetcorn and the gouda cheese cut in small cubes, as well as the sautéd sausages with the salt and pepper. Mix them well until all ingredients are spread throughout the bowl.
Lastly add the yoghurt dressing and continue mixing until everything is covered with it. Once done, keep the pasta salad in the fridge until it’s time to serve.
