In a medium sized bowl add the feta cheese, cheddar, ricotta, egg and pepper. Crumble all ingredients with a fork and mix them until they’re all combined and set aside.
In a separate bowl add the butter, yoghurt, egg, salt and the flour. Mix them by hand until well combined or until the dough is soft and no longer sticks to your hands.
Using a rolling pin, roll out the dough (about 3mm thick) and use a cup or a cutter to cut rounded dough shapes (about 9cm in diameter).
Add a full teaspoon of the cheese filling to the centre of the rounded dough.
Fold over to make a half circle and seal the edges with a fork.
Place the mini cheese pies on a baking tray covered with parchment paper.
Brush them lightly with a beaten egg.
Sprinkle a pinch of sesame seeds on top of each cheese pie and bake them in a preheated oven at 180ºC (350ºF) for about 18-20 minutes until golden brown.
