This quick and easy store cupboard supper summons the seductive scents and flavours of the Mediterranean - without you even having to leave home!
Add the olive oil to a pan and sauté the garlic and sun-dried tomatoes for 2 minutes over medium heat.
Continue by adding the chopped tomatoes, salt, pepper and oregano and let them simmer for 10 minutes.
The sauce is almost ready, add the chopped olives and capers, simmer for 5 more minutes and set aside.
Cook your favourite type of pasta following the pack instructions.
Before draining them, save a ladle of their water.
Drain the pasta and return to the pot, add the sauce and the pasta cooking water and toss everything together well.
Serve as it is or sprinkled with freshly grated Parmesan.
