This fooodlove lemon pea stew is a take on a traditional Greek Arakas Laderos recipe, minus tomatoes. It’s a perfect dinner party side or light dinner.
Add the olive oil and onions in a large pot, and sauté them over high heat for 4 minutes.
Add the spring onions, potatoes and carrots, and sauté them for another 2 minutes.
Continue by adding the peas, vegetable stock and salt, and pour enough water (approx 600ml) until you cover the peas. Stir and simmer for 20 minutes over medium heat.
Add the finely chopped dill, the lemon juice and salt last to retain their flavour. Stir them well and let them simmer for 5 minutes before serving.
