Greek Spinach and Rice (Spanakorizo)

Spanakorizo is a healthy, traditional Greek dish of spinach and rice. This comforting bowl is packed with vitamins and flavor.

what you'll need
  • 500 g spinach
  • 1 onion
  • 2 spring onions
  • 1 leek
  • 1 tbsp tomato paste
  • 1 tomato (grated)
  • 90 ml olive oil
  • 190 g risotto rice or short grain rice
  • 500 ml vegetable broth
  • 1 tsp salt
  • ¼ tsp pepper
  • 30 ml lemon juice (about 1 lemon)
  • 1 handful dill

Start by chopping the onion, spring onions, and leek into small pieces. Then use half of the olive oil (45ml) in a large pot to sauté them for 3 minutes.

Gradually add the spinach to the pot and simmer for 5 minutes until the spinach is limp.

Next, add the tomato paste, grated tomato, rice, and vegetable broth to the pot, and give everything a good stir.

Cook for 20 minutes on medium heat, stirring occasionally and adding more water if necessary.

Lastly, add the salt, pepper, lemon juice, and dill. Stir until combined and then add the remaining olive oil.
