Greek Spinach and Rice

what you'll need
  • 500 g spinach
  • 1 onion
  • 2 spring onions
  • 1 leek
  • 1 tbsp tomato paste
  • 1 tomato (grated)
  • 90 ml olive oil
  • 190 g calrose or long grain rice
  • 500 ml vegetable stock
  • 1 tsp salt
  • ¼ tsp pepper
  • 30 ml lemon juice (about 1 lemon)
  • 1 handful dill

In a large pot add half of the olive oil (45ml), onion, spring onions, leek and sauté them for 3 minutes.

Add the spinach and simmer it for 5 minutes.

step 3

Continue by adding the tomato paste, grated tomato, rice, vegetable stock and stir.

Simmer for 20 minutes and check occasionally if it needs extra water.

Lastly, add the salt, pepper, lemon juice, dill and the remaining of olive oil and stir.
