Giouvetsi is a traditional Greek recipe that combines orzo, chicken, vegetables, and tomato sauce for a one-pot winter warmer.
To start, cut the chicken into small chunks and add it to a pot with some olive oil. Sauté for around 8 minutes or until browned.
Continue by adding the grated onion, leek, pepper, and garlic, and sauté for another 4 minutes.
Stir in the tomato paste to the bottom of the pot and mix it for 1 minute. This helps remove its bitterness.
Slowly add the wine and stir every now and then until it completely evaporates.
Mix in the tomato sauce, warm water, bay leaf, salt, and pepper. Stirring occasionally, let them simmer for 10 minutes.
Add the orzo to the pot and stir occasionally for 2 minutes.
Pour the mixture into an ovenproof dish and bake in a preheated oven at 180ºC (350ºF) for 20 minutes.
Let it cool for 20 minutes before you serve and sprinkle each serving with grated cheese.
