This is the ultimate Greek snack, which packs SO much flavour! The perfect light lunch on a hot summer's day...or to accompany some delicious retsina!
Grate one tomato in a bowl and through away the left over tomato skin.
Chop the second tomato in small pieces and add it to the bowl.
Add the olive oil, vinegar, salt and pepper to the bowl and mix them.
Use a separate bowl with water and dip each rusk for 1-2 seconds on both sides. Drain the excess water and set the rusk on a plate.
Spread plenty of the tomato mixture on the rusk, including some of the tomato juices.
Add a handful of crumbled feta cheese over the tomato.
Drizzle some olive oil over the feta and sprinkle a pinch of oregano.
