Peel the cucumbers and grate them on the large bladed side of the grater.
Transfer the grated cucumber to a colander and squeezed it with a spoon or your hands to remove all liquid.
In a bowl add the strained cucumber, yoghurt, olive oil, garlic, vinegar and salt, and stir everything until combined.
Refrigerate for at least an hour before serving.
