Veggie Burger Patties

An easy, quick to make and healthy veggie burger patty recipe perfect for BBQs or midweek meals.

what you'll need
  • 100 g couscous
  • boiling water
  • 240 g chickpeas
  • 5 spring onions
  • 70 g peas
  • 70 g corn
  • 1 carrot (shredded)
  • 2 tsp parsley
  • 1 tsp salt
  • ½ tsp pepper
  • 3 tbsp olive oil

Add the couscous in a bowl and cover it with boiling water. Place a kitchen towel on top for 5 minutes for the couscous to absorb the water and set aside.

Transfer the couscous and the chickpeas in a food processor and blend them until they’re well combined.

Chop the spring onions and sauté them in a pan with 1 tablespoon of olive oil for 3 minutes.

Continue by adding the corn, peas and shredded carrot and sauté for another 3 minutes.

Transfer the sautéed vegetables with the couscous mixture in a bowl, add the salt pepper and parsley and mix them until well combined.

Divide the mixture into 6 equal portions and form each one into a patty using your hands.

Add 2 tablespoons of olive oil in a pan and cook each patty for approximately 4 minutes on each side.

Enjoy them with your favourite side dish or use them to make delicious veggie burgers.
