These turkey and cheese toast rolls are the perfect solution, working as a last-minute breakfast, a kids’ party nibble and a lunch box filler.
Remove the crust from each slice of bread.
Using a rolling pin, roll out the bread slices until they are flatten.
Spread a bit of ketchup to the half side of the bread.
Top with a half slice of cheese and turkey along the bottom edge of the bread.
Grate the onion and pepper and add half a teaspoon of the mixture.
Roll up tightly starting from the bottom and finish with the seam side down.
Place the rolls in a tray or oven dish and brush them with the beaten egg.
Bake in a preheated oven at 200ºC (392ºF) for about 10-12 minutes or until they get lightly brown.
