Fasolakia Giaxni is a brilliant, elevated Greek veggie side dish or even main, made with all store cupboard staples and freezer-friendly ingredients!
In a large pot add the olive oil and sauté the chopped onion for 4 minutes.
Continue by adding the spring onions, garlic, potatoes and carrots, and sauté them for another 4 minutes.
Add the tomato paste to the bottom of the pot and mix it for a minute to release its aroma.
Add the green beans, chopped tomatoes and warm water. Stir them and let them simmer in medium heat for about 40-50 minutes (check occasionally and add extra hot water if needed).
Finally, remove the pot from the heat, add the salt, pepper and parsley and stir them one more time before serving.
