Start by chopping the tomatoes in small pieces and add them in a large bowl.
Add the rest of the ingredients (oregano, mint, salt, pepper, flour and feta cheese) in the bowl and mix them lightly (don’t over mix, because we don’t want too much juice coming out of the tomatoes).
Refrigerate for 30 minutes to allow the mixture to firm up.
Shape the tomato fritters into patties and dip them in very hot frying oil.
Fry them for approximately 1 minute on each side or until both sides are golden.
Transfer them on a plate covered with kitchen paper to remove the excess oil before serving.
