Crustless Zucchini Pie

This easy crustless zucchini pie is perfect for a light summer meal. It's packed with flavour and nutrients, and it's so simple to make!

what you'll need
  • 2 large zucchini (grated)
  • ½ tsp salt
  • ¼ tsp paprika
  • ⅛ tsp pepper
  • 2 spring onions
  • 1 large onion (grated)
  • 1 bunch dill
  • 3 eggs
  • 200 ml vegetable oil
  • 200 g parmesan cheese
  • 260 g self raising flour
  • 200 g feta cheese
  • olive oil
  • sesame seeds

Start by grating the zucchinis in a large bowl.

Add the spices - salt, paprika and pepper - in the bowl and mix.

Chop the spring onions, grate the onions and add them along with the rest of the ingredients to the bowl and mix everything very well.

Continue by adding the feta cheese and fold the batter slowly so that it gets incorporated to the mixture (don’t over mix, we want to have small feta chunks in our pie).

Use a little bit of olive oil to oil up a baking tray, spread the mixture evenly and sprinkle sesame before you bake in a preheated oven at 180ºC (350ºF) for 40 minutes.
