Add the oil, milk, sugar, eggs and vanilla extract to a mixer and mix them until everything is combined.
Add the flour, baking powder and salt, and continue mixing until you have a smooth batter.
Cover a cake pan (approx. 20x30cm) with parchment paper and also brush it with oil so it’s easier to remove the cake.
Pour the cake batter into the cake pan and bake at 170ºC (338ºF) for about 30 minutes.
Let the cake cool, cut it into small square pieces and prepare the chocolate syrup.
Add the water, sugar and dark chocolate to a small pot over medium heat and stir continuously until the chocolate melts completely.
Dip each cake square into the chocolate syrup using a couple of forks.
Let the excess chocolate drip off and place it in a bowl with desiccated coconut. Make sure all sides are covered with coconut and repeat.
