Start by chopping the onion, garlic and carrot into small pieces. Then, add olive oil to a medium-sized pot and sauté them on high heat for 4 minutes.
Next, add the vegetable broth and split peas to the pot and stir them together.
Add the salt, pepper, oregano and thyme to the pot and simmer at very low heat for 45 minutes (until all of the water has evaporated).
While the pot is simmering, check it every so often and remove any foam forming on the sides.
Carefully pour the pot’s contents into a food processor and blend until the mixture becomes puréed and smooth.
Serve warm or cold and garnish with thin sliced onions, capers and olive oil.
